I have 2 new obsessions right now, and one is converting everything I love into vegan (as long as it’s EASY), and the other is using my Vitamix. I’ve really only used it for my green smoothies for the past 6 months, so now I’m ready to experiment! The Whole Foods Vitamix cookbook has some great recipes, and I am having fun converting. Just made the avocado bread, with only a couple of revisions to make it healthier and vegan friendly! The ingredients are listed below, but here is what I revised:
Eggs: 6 tbsp. ground flaxseed mixed with 18 tbsp. water (yes, there is probably a better way to measure. Let it stand for a minute or 2, then use it in the recipe just like you would have for eggs.
Sugar: Raw Turbinado Sugar
Ingredients: Makes 16 servings (16 slices)
|2 cups||unbleached flour|
|1 cup||whole wheat flour|
|1 tsp.||baking soda|
|1 tsp.||baking powder|
|1/4 cup||olive oil|
|1-1/2 tsp.||vanilla extract|
|3/4 cup||sunflower seeds|
1.) Preheat over to 350 degrees and spray a loaf pan with cooking spray.
2.) Combine flour, sugar, baking soda, baking powder, cinnamon, and salt in a large mixing bowl. Set aside.
3.) Add egg whites (or ground flaxseed mixture), oil, vanilla, nutmeg, and water in the Vitamix container in that order. Secure the lid.
4.) Select Variable 1. and turn the machine on. Quickly increase speed to Variable 10, and then to High. Blend for 30 seconds.
5.) Reduce the speed to Variable 2 and remove the lid plug. Add the avocado and sunflower seeds. Replace the plug.
6.) Increase speed to variable 4 and blend for 10 seconds.
7.) Pour the wet mixture into the dry mixture and fold until evenly incorporated. Pour into prepared loaf pan.
8.) Bake for 45-50 minutes or until knife inserted in center comes out clean.
9.) Slice and serve. Yum!
