Vegan Spaghetti


Make your spaghetti healthy, vegan, and definitely yummy. This was our supper tonight, and I don’t feel like I missed out on one thing!
1 yellow bell pepper chopped
1 green bell pepper chopped
2 stalks of celery chopped
1/2 onion chopped
1 small can mushrooms
1 jar organic spaghetti sauce
1 package of vegan “meat” crumbles
1 package brown rice noodles

Sauté veggies in olive oil until slightly tender. Add crumbles, break them apart, and stir. Add sauce and mushrooms and simmer as long as you can for the best flavor. Cook brown rice noodles according to instructions, and voila, a surprise vegan meal packed full of veggies (and your kids won’t even know!).
